Dehydrated onion and garlic replace fresh produce at a fraction of the weight: a medium onion is about 88% water, so 110 g of fresh onion becomes roughly 12 g of flakes or 7 g of powder. That is good news for shelf life, freight and consistency, but it means every recipe, every blend and every purchase order needs a reliable conversion.

How accurate is the conversion calculator?
It uses the industry kitchen ratios: 1 medium onion (about 110 g) equals 1 tbsp onion powder (7 g), 3 tbsp dried minced onion (12 g) or 1/4 cup onion flakes (12 g); 1 garlic clove (about 4 g) equals 1/8 tsp garlic powder, 1/4 tsp garlic granules or 1/2 tsp dried minced garlic. Onion sizes and clove sizes vary, so treat the result as a starting point and adjust to taste.
